I'm a 22 year old student and skier. I really love dirt, traveling, and dogs. Here you'll find an area where I discuss my life happenings, and some projects I've worked on- mostly skiing articles.

HOW TO MAKE TOTALLY AWESOME BASIL CASHEW CHICKEN

HOW TO MAKE TOTALLY AWESOME BASIL CASHEW CHICKEN

I've been on a cooking kick recently, and have made some bomb ass food recently. I keep meaning to post a step by step thing (mainly for myself) but instead I only take pictures of the finished product. So, I'm giving you what I made for dinner tonight:

TOTALLY AWESOME BASIL CASHEW CHICKEN

*I didn’t measure for crap so add ingredients to taste*

  • One Chicken Brest, cubed
  • Clove garlic, minced
  • Shallot, chopped or minced
  • Coconut oil
  • Oyster sauce
  • Soy sauce
  • Red chili paste
  • Brown sugar
  • Salt
  • Fresh Basil leaves
  • splash of lemon juice
  • cashews

OKAY, so make sure you've prepped your sauce, and prepared all ingredients, because this comes at you fast.

  1. Heat coconut oil
  2. Add garlic and shallot once warmed, cook for ~2 min
  3. Add chicken, cook until all sides are white
  4. Mix the oyster sauce, soy sauce (more soy than oyster), red chili paste, salt, and brown sugar in a bowl
  5. Add sauce mix to pan
  6. Stir until all pieces are covered, and sauce begins to thicken,
  7. Add basil leaves, mix again, then squeeze lemon over top to taste
  8. Pull from heat, add cashews and mix again.
  9. Enjoy
